Genghis Grill’s New Prototype Takes on Fast-Casual Service Model

Dallas-based Genghis Grill unveiled a new future-forward prototype that speeds up service and adapts to its expanding off-premise business.

Set to debut in early 2023, the smaller-footprint prototype takes on a fast-casual service model, a switch from its traditional design of a sit-down casual restaurant, and features the latest tech to get guests in and out quickly. The brand says customers will be served in under 15 minutes of placing an order through a kiosk or a team member.

To better serve off-premise customers—a segment of the business that has grown from 10% to 40%—the prototype features separate to-go order staging and a pickup area, curbside parking spots and mobile-ordering technology. The fresh bowl concept says it aims to continue to grow its off-premise business.

The prototype is less than half the size of a traditional store, going from 5,000 square feet to 2,100 square feet, a reduction that Genghis Grill says will help with labor shortage issues and offer better real estate options.

Genghis Grill, part of the Mongolian Concepts portfolio of brands, has over 50 locations in the U.S.
